Ezmay (Crush Tomato Salad)


  • 250g ripe tomatoes
  • 2 tbsp vinegar
  • 1 sweet green pepper
  • 1/2 cucumber
  • 2 sprigs spring onions
  • 1 tsp dried mint
  • salt and pepper to taste
  • 1 tbsp paprika to taste
  • 1 tbsp olive oil


Peel the tomatoes and cucumber. Remove the stalks and seeds of the green pepper. Remove the outer layer of the spring onions. Chop up these vegetables finely but do not pulverise. Add all the other ingredients. Mix well.
