Apple Compote Supreme (Elma Saray Komposto)


  • 6 golden delicious, red will also do
  • 3 tblsp lemon juice
  • 1/2 cup sultana raisins
  • 1 tblsp orange marmalade (optional)
  • 1/2 cup sugar
  • 8 cloves
  • 2 cups water


Peel and cut apples into quarters and core. Place them in a pan adding the lemon juice, water and sugar. Cook until apples are softened then add the raisins and orange marmalade and cook ten minutes more. Serve this well chilled. (You may omit the marmalade but add a small stick of cinnamon and 6-8 cloves when you start cooking the apples. Raisins may also be added earlier but it is better not to have them mushy.
Serves 6.
