Mantarli Tavuk (Chicken with Mushrooms)


  • 1 Tbsp butter or margarine
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • generous 1/2 cup dry white wine
  • 1 bouquet garni
  • salt and ground black pepper
  • 1 red bell pepper, seeded and chopped
  • 4 chicken quarters
  • 1 Tbsp tomato paste
  • 3 bay leaves
  • 8 oz button mushrooms


1 Melt the butter or margarine in a saucepan and fry the chicken portions until evenly browned. Add the onion and garlic, and fry for 2 minutes more, then stir in the flour.
2 Pour in the stock with the tomato paste. Mix well, then add the wine and the herbs. Season to taste, cover, and cook over low heat for 1 hour. Add the bell pepper and the mushrooms, and simmer for 15 minutes more before serving.
