Spinach Puree – Ispanak Puresi

Ingredients

  • 1 and 1/2 glasses milk
  • salt
  • 1 coffee cup flour
  • 1 coffee spoon bicarbonate of soda
  • 1 coffee spoon sugar
  • 15 glasses water
  • 2 kilos spinach
  • 2 onions
  • 6 soup spoons butter

Directions

Remove the roots and cut the spinach into 3 or 4 pieces. Wash the leaves and then boil them in the salted water to which the soda is added. Drain the spinach with a strainer, removing the excess water by pressing on it with your hand. Put the spinach on a plate and cut into slices. Put aside. Melt 2 soup spoons of butter in a saucepan. Add the grated onions and flour, and keep stirring for 2 minutes, but don’t let the flour become brown. Add the spinach and stir 2 minutes on a medium heat. Slowly pour the milk over the spinach, then add the sugar, 1/2 soup spoon salt, and the rest of the butter. Stir for 2 minutes, then remove from the heat.
