Mackerel Papillote

Ingredients

  • 4 big or small mackerel
  • ½ cup (30 gr.) parsley, chopped
  • Salt
  • ½ lb. (225 gr.) kasar or parmesan cheese, grated
  • 1 tablespoon salad oil
  • 4 teaspoons of water for sprinkling
  • 4 pieces of wax paper, 10×10 inches (25×25 cm)
  • 2 tomatoes, sliced
  • 8 lemon slices
  • 1 cup (100 gr.) mushrooms, sliced
  • Freshly ground pepper to taste

Directions

Gut and wash each fish, drain and rub it with salt. Brush oil on each piece of wax paper. Place one big mackerel or two small ones on each of the pieces. Place tomato lemon slices and mushrooms on each fish. Season with pepper and sprinkle with parsley and cheese. Fold the paper over the fish to make a package. Sprinkle tops of all packages with water. Bake in a moderate oven for approximately 30 minutes. Serve hot in packages as a main course with boiled potatoes and salad.
