Peynir Tatlisi – Cheese Cookies
- 125 gr. white cheese
- Syrup: 1 kg. sugar, 5 cups water, juice of 1/2 lemon
- 1/2 cup cornstarch
- 1 cup flour
- 1 cup water
- 1 cup powdered sugar
- 125 gr. margarine
- 1 egg yolk
- 1 teaspoon baking soda
Preheat oven to medium to high heat. To make the syrup: heat water, add sugar and bring to boil, add lemon juice, lower heat and simmer for 10 minutes. Keep hot. Soak the cheese for an half hour in warm water, then drain. Place in a bowl and mash with a fork. Add baking soda and powdered sugar. Add the egg yolk and mix well with a wooden spoon until thoroughly blended. Then add flour and knead for 1-2 minutes. Form into egg-shaped ovals.
Place small spoonfuls of this mixture approximately 5 cm. apart in a greased baking dish. Bake for fifteen minutes. Transfer the cookies into a pan. Then pour the syrup over them and cook for 3-5 minutes. Remove them, placing them upside down. Serve cold.
