Zeytinyagli Kabak (Zuccini in Olive Oil)

Ingredients

  • 1 cup olive oil
  • 2 big tomatoes
  • 2 medium onions
  • Salt
  • 1/2 kg. zucchini
  • 9 cloves of garlic
  • 1 tablespoon of sugar
  • 1 bunch of chopped parsley

Directions

Sauté chopped onions in 1/3 cup olive oil for 10 minutes, then add garlic, parsley, diced tomatoes and 1 tablespoon of salt. Cook on low heat for 10 minutes more.
Peel zucchini and cut into small pieces. Place zucchini in a saucepan and add ½ cup water and 1/3 cup olive oil, 2 cups hot water, sugar and the tomato mixture. Cover and cook over low heat for 1 hour. Serve cold.
