Yesil Biber Kizartmasi (Green Peppers stuffed with Sheep Cheese )

Ingredients

  • 4 green peppers (long sort)
  • 200 g. sheep cheese (feta)
  • 2 eggs
  • 3 T. chopped parsley
  • paprika to taste (try 1/2 t. first)
  • olive oil

Directions

Cut off the tops of the peppers and remove the seeds. Soak in salt water for about 30 minutes. (If the cheese is very salty, soak this in plain water too. Drain well before using)
Break up the cheese with a fork and mix with the paprika, parsley and the beaten eggs. Fill the peppers almost to the end and fry in hot olive oil.
