Terbiyeli Kalkan Baligi (Turbot with Sauce)

Ingredients

  • 1.5 kg. of turbot
  • juice of 1 lemon
  • 3 egg yolks
  • 1 bay leaf
  • 2 medium onions, chopped
  • 1 small celery root, chopped
  • 1 tablespoon flour
  • 1 bunch of chopped parsley
  • 3 potatoes
  • salt and pepper to taste
  • 1 small carrot
  • 3 cloves garlic
  • 1/2 cup of olive oil

Directions

Sauté the celery root, onions and parsley briefly with the bay leaf. Add ground garlic, flour, three cups of water and salt, and cook over medium heat until the vegetables are done. Place washed and drained turbot in a pan, sprinkle with pepper and dash of salt. Then cover with the vegetables adding one more cup of water. Let it simmer for half an hour in an uncovered pan.
Beat egg yolks and lemon juice together, add 1 cup water and pour over the fish. Serve hot.
