Spicy Turkish Eggs

Ingredients

  • 2 onions, finely sliced
  • salt & pepper
  • 1 yellow pepper, cored & sliced
  • yoghurt
  • 2 red peppers, cored & sliced
  • 2 cloves garlic, chopped
  • 1-2 chillies, chopped
  • 1/2 tsp cumin seeds
  • 3 tbsps oil
  • 4 eggs

Directions

1) Fry the vegetables and spices in olive oil until the peppers are soft and juicy. Season with salt.

2) One at a time break the eggs into a saucer and then slip into the nest of peppers. Cook until the whites of the egg are set.

3) Serve from the pan with a dollop of yogurt.
