Pickled Squid

Ingredients

  • 2 1bs. of squid
  • 2 tablespoons of olive oil
  • 3/4 cup of vinegar
  • 1 teaspoon of pickling spices tied in a cheesecloth, salt and pepper to taste

Directions

Wash and clean squid well and drain. Place in casserole-no water is necessary-cover and cook for 30 minutes until tender. Drain and chop, reserving the liquid for pilav. To, vinegar the chopped squid which you have put in a casserole add olive oil, vinegar, spices and salt and pepper. bring to a boil and simmer for 5 minutes. Discard the spice bag. Transfer to bowl or jar and chill. Serve cold. The recipe makes eight servings of tasty appetizer.

Fried mussels are always a welcome appetizer. There are places in Istanbul and Ankara that skewer the mussels and fry them in batter, Folks make a whole meal out of these fried mussels which are served with garlic sauce. I will tell you how we prepare fried musses and the accompanying garlic sauce. Clean the mussels thoroughly and pry open. Remove the mussel meat and roll slightly in flour. Saute in olive oill until lightly browned. Serve hot with garlic sauce.
