Lentil Salad (Mercimek Salatasi)

Ingredients

  • 3/4 cup lentils
  • 1/2 cup chopped parsley
  • 2 cups hot water
  • salt, pepper
  • 1 bunch (approx one dozen) green onions
  • 1/2 cup vinegar and salt (1/4 cup of each)

Directions

Soak lentils overnight then wash and boil in 2 cups of hot water until they are quite soft but not mushy. Drain lentils and place them in a bowl, add green onions cut into small pieces and all other ingredients. Mix well, garnish with ripe olives.
Serves 4
