Cilbir – Turkish Eggs

Ingredients

  • 1 clove of garlic
  • milk, vinegar, salt
  • 2 eggs
  • ground paprika
  • 100 grams yogurt
  • butter
  • tomatoes and cucumber to garnish

Directions

Crush the clove of garlic, mix it with a little salt, add some milk, mix all this through the yogurt and put the mixture aside in a warm place. Bring two litres of water with 4 tablespoons of vinegar and a teaspoon of salt to the boil. Break the eggs and pour them in a cup. As soon as the water boils, you add the eggs to the water and leave them to boil for about four minutes until the egg white has turned solid. Remove the eggs from the water with a skimmer and put them on top of the yogurt sauce. Melt the butter in a pan, add some ground paprika and pour the melted butter over the eggs. Garnish the dish with tomatoes and pieces of cucumber. Serve with Turkish bread.
