Borani (Spinach-Yogurt Salad Or Dip)

Ingredients

  • 500 grams of fresh spinach
  • 500 grams of yogurt (or more)
  • 3-4 tablespoons of flour
  • 1-2 cloves of garlic
  • 4 tablespoons of water
  • 5-6 tablespoons of olive o
  • Salt, ground paprika

Directions

Wash the spinach thoroughly, cut into small pieces and bring to the boil in a pan with a little water. As soon as the spinach is slightly cooked, remove the pan from the heat and leave the spinach to cool off. Put the olive oil in a large pan and braise the flour while stirring well so that the flour will not get lumpy or sticky. As soon as the flour turns slightly brown, add the spinach. Mix the flour well through the spinach. Leave the flour-spinach mix to cool off.
In the meantime press the cloves of garlic and mix them into the yogurt. Bring to taste with some salt. As soon as the flour-spinach mix has cooled off, add the garlic yogurt and mix it well. If the quantity of yogurt is not enough for your taste, you can add more. However, the proportion of spinach to yogurt needs to stay roughly the same. Sprinkle some ground paprika over the mix and voilĂ ! Your dish is ready! This dish is particularly pleasant during the summer, when the weather is nice and warm. It can be used as a side dish or as a dip for a barbeque as well.
