Bahar Corbasi – Spring Soup

Ingredients

  • 5 cups of broth
  • salt and black pepper to taste
  • 100 grams rice
  • 150 grams spinach, chopped
  • 50 grams grated Kasar or Gruyere cheese
  • 150 grams of fresh peas
  • 1/2 bunch of parsley, chopped
  • 1 tablespoon butter or margarine
  • 2 tablespoons olive oil

Directions

Bring broth to a boil in a saucepan, add rice and peas, salt and pepper and cook for 15 minutes. Then add the spinach and parsley and butter or margarine and cook for another 10 minutes. serve hot with grated Gruyere cheese.
