|Saray Usulü Enginar (Artichoke Supreme) Recipe|
- 6 artichoke hearts (all leaves and the fuzzy inside is removed and only the flat bottom is left)
- 1 cup water
- 2 potatoes (cut into very small pieces)
- 1 tsp. dill weed
- 1/2 1 b fresh or frozen peas
- 1 cup carrots (cut into very small pieces)
- 1/2 cup onions (finely chopped)
- 1 tsp. salt
- 1 teaspoon granulated sugar
- 1/2 cup olive oil
Mix everything together and spoon the mixture on each artichoke heart. Place these into a shallow pan and add the water and oil evenly on all the artichokes heaped with the diced vegetables. Simmer over medium heat until everything is well done. Place them on a fat dish and garnish it with fresh dill springs.
Serve at room temperature.
