- 1 1/2 cups + 2 Tablespoons sugar
- 6 cups water
- 2 teaspoons lemon rind
- 1 cup fresh mint leaves
- 6 medium size lemons
In a large bowl, dissolve the sugar in water, stirring occasionally. Set aside 1 TBL. Rub the lemon rind and 6 - 8 mint leaves with the 1 TBL of sugar until all flavor is extracted or pound the lemon rind, mint leaves and sugar in a motar with a pestle. Stir in sugar solution, mixing well, and then strain through a sieve. Squeeze lemons and extract their juice and combine with the sugar solution, mixing well.
Cover and chill, and serve garnished with mint leaves.
